Zucchini Lasagna
4 thinly sliced zucchini (optional: grill or lightly bake slices to remove excess water)
1 cup pasta sauce
8 oz cream cheese
1 cup ricotta cheese
½ cup mozzarella cheese
1 cup fresh Parmesan cheese
2 teaspoon oregano
2 cloves of garlic
½ teaspoon paprika
2 tablespoon extra virgin olive oil
½ teaspoon salt
½ teaspoon black pepper
¼ cup of onions
½ cup of cilantro
½ cup of parsley
Instructions…
Put the zucchini slices in a tray, lightly brush with extra virgin oil, then place in the oven at 300 degrees until golden brown, then flip them until the other side is also golden brown. First, add your pasta sauce to your bake tray, then line your slices of golden brown zucchini. Add the mixture of cream cheese, ricotta, mozzarella, and Parmesan cheese. In a large pot, heat your extra virgin olive oil, then add the essential ingredients: salt, black pepper, oregano, paprika, onions, cilantro, parsley, and garlic. Then spread these ingredients over your cheese mixtures. Repeat this process until your bake tray is full. Then add some pasta sauce on the top layer, then sprinkle some mozzarella cheese until completely covered. Let it bake for 30-40 minutes at 350 degrees. Bon Appetite!

1/2 cup melted unsalted-butter
¼ cup extra virgin olive oil (optional for more moistness)
2 eggs (at room temp)
2 teaspoon pure vanilla extract
1 cup brown sugar
1 ½ cups of non-bleached flour
1 teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon cinnamon
½ teaspoon salt
1/3 cup of plain yogurt
2 cups mashed banana (3 or 4 over ripped bananas)
½ cup chopped walnuts (optional)

Preheat the oven to 350 degrees F. Grease a 9×5 inch loaf pan. In your mixing bowl, stir the melted butter and sugar together. Add the eggs and vanilla, mix thoroughly. Combine the flour, baking soda, nutmeg, cinnamon, and salt, stir into the butter mixture until smooth. Finally, add the yogurt, walnuts, and bananas. Bake at 350 degrees F (175 degrees C) for 60 minutes. Insert a toothpick into the center of the loaf to make sure it comes out clean then cool banana bread for 10 minutes. Bon Appétit!
